We are very pleased to introduce new Head Chef Ian Penn and his Sous Chef Parth Bhatt who have recently joined The Chester Fields. Ian and Parth are currently in the process of compiling our new Winter menus which we are incredibly excited about, especially as we have just celebrated our first Birthday. Here’s a little more about each of our new kitchen super stars…

Head Chef Ian Penn started his career in 1988 as Apprentice on the Académie de Culinaire de France Specialised Chefs Course at the infamous Claridge’s Hotel, London. Claridge’s has always been very firmly placed as one of London’s finest Hotels and has most certainly stood the test of time, so Ian is very proud that he entered the profession and spent the next five years at such a legendary establishment.

Over the next 10 years, Ian would work his way up through London and the Home Counties, stopping off at some notable venues along the way including Wentworth Golf & Country Club in Surrey, The Royal Automobile Club, Pall Mall, London and Sopwell House Hotel, Country Club and Spa, St Albans.

By September 2003, he was awarded the position of Executive Sous Chef of the very luxurious Jumeirah Carlton Tower Hotel in Knightsbridge and this appointment heralded his arrival to the culinary ‘big time’.

In September 2009 Ian was beckoned to return right to his roots and came full circle when he was offered the much sought after position of Executive Sous Chef at Claridge’s Hotel, where he spent the next two years working extremely hard. Then followed a move, both career wise and geographically, to be Head Chef at New Hall Hotel and Spa in Sutton Coldfield and closer to Cheshire, where he would soon arrive as Head Chef at The Chester Fields…

And behind every great Head Chef, there has to be a great Sous…
Parth Bhatt started his culinary journey much closer to home in Liverpool at Simply Heathcotes in 2004 as Commis Chef. Although he stayed close to home for the next few years, he too decided to get right in amongst it with a stint at The Berkeley, London with food legend and Michelin-starred Chef Marcus Wareing. During this time Parth was lucky enough to also get a stage at Heston Blumenthal’s 3 Michelin-starred Fat Duck in Bray.

But by 2006 Parth was off again, this time his journey took him all the way to Bombay, India, where he Joined Four Seasons as Chef de partie working under Jean Carlo, producing the very best quality of Italian cuisine. Jean Carlo had been awarded one Michelin star in Italy, and Parth learned as much as he could in this unique and dynamic environment.

In 2008 Parth returned to his beloved Liverpool and an exciting new venture ‘Panoramic 34’ as Chef de Partie. After a great deal of hard work and determination, Parth was awarded the position of Head Chef in September 2010 where he remained until he was enticed to our very special Cheshire home of food & drink…
