Fabulous Cookery Experience at Harthill Cookery School, Cheshire with Chef Brian Mellor

Have you ever thought about going on a Cheshire cookery course??
If not, then you should do, and if you have – you need to take a good look at Harthill Cookery School near Tattenhall, just 15 minutes drive from Chester city centre.

Harthill Cookery School is owned and run by renowned Cheshire Chef Brian Mellor and offers a huge range of full and half day courses – including:

There certainly is a course to suit everyone (including dessert courses) and I was lucky enough to be invited on the ‘Excellent Eclairs’ course last weekend, delivered by Brian’s good chef friend Toby Beevers.

Brian often invites specialist chefs and other food enthusiasts to take specific courses including the amazing BBQ course in the Summer, and also a fab foraging course when a demo is given after a three hour forage in the surrounding woodland… what a fabulous way to spend a day in the Cheshire countryside! (I’ll definitely be signing up for that one very soon!)

Toby Beevers is pastry chef extraordinaire having spent 4 years making delicious treats at The Chester Grosvenor Hotel plus many other 4 and 5 star establishments. He now spends his time consulting on all things naughty and nice, as well as being a key member of the Welsh Culinary Association, and running his own artisan chocolatière business, Kokonoir.

So I knew we were in for a real treat with his Excellent Eclairs course, and he certainly didn’t disappoint!

We all arrived to coffee and biscuits with Brian and Toby, where we introduced ourselves to the rest of the group and had a chat about how our day would go…

Then it was off to the kitchen (you can get a group of 8 people on a weekend leisure course, all with their own cooking station in the school kitchen at any one time) and after an initial demonstration from Toby, we were off with our recipe sheets to weigh, stir, mix, heat and generally have a fabulous time making, baking and sampling the odd spoonful here and there!

We were taught how to make choux pastry as well as the gorgeous fillings and toppings, and we all went home with a cake box full of white chocolate, coffee fondant and vanilla eclairs – and were delighted with our efforts! They were indeed… Excellent!!

We all agreed that we had enjoyed a fabulous day making something that none of us had ever tackled before, and with expert tuition and a little more confidence – we would all certainly try at home again.
